Green Chile Chicken Tostadas

I am a creature of habit, and that definitely includes the meals I make every week. There’s bound to be a burger night, a roasted chicken & veggie night, and a taco night because they are my easy go-tos that I don’t have to think about. But how many times can I cycle through that menu before I need a little something to spice up my life?

I recently have been making Tostadas a part of my weekly rotation because they are a fun twist on tacos. Still just as easy, but a little more fun! I decided to share the super-easy Tostadas I made this week on here just in case you need some inspiration for a new healthy easy meal!

Green Chile Chicken Tostadas

Serves 2

Ingredients:

For the crockpot chicken-

  • 1- 1 & 1/2 lbs boneless skinless chicken breast
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 7-oz can diced green chiles
  • 1/3 cup green chile salsa / salsa verde

For the mango salsa

  • 1 mango, diced
  • 1/2 medium-sized red onion, diced (or about 1/4 cup diced red onion)
  • 3 tbsp jarred jalapenos, diced
  • Large handful cilantro, minced

Directions:

Place the chicken in the bottom of a crockpot. Sprinkle with cumin, chili powder, and plenty of salt & pepper, and mix to combine. Pour in the canned chiles and green salsa on top. Cook on low for 4-6 hours or on high for 3-5 hours, and shred the with two forks before serving.

While chicken cooks, make the Tostadas tortillas.

Make the salsa by making sure all the salsa ingredients are finely diced/chopped. Mix ingredients together in a small bowl. Place in fridge until ready to serve.

To serve- Grab a crispy tostada tortilla, place chicken on top. Immediately put a sprinkle of shredded cheese on top of chicken, then mango salsa, then some shredded lettuce or spinach. Enjoy!
